Menu Plan Week of October 24

Creamy Chicken Flautas and Black Bean Taquitos with Spanish rice
Spaghetti with meatballs (never got to it last week)
Chicken tenders (or maybe this recipe) with baked fries and salad
Meatloaf with roasted veggies and mashed potatoes (I have a great meatloaf recipe I got from Sally Churgai with horseradish in it!)

Apple Dessert - might make this some time this week - possibly bake the apples?  Using regular caramel sauce?

Mini-Peach Cobbler
Last week I made an impromptu dessert for an impromptu date night IN.  I diced a large peach and divided between two ramekins.  Mixed about 1/4 cup oats with about 2 T brown sugar and several dashes of cinnamon and then spooned it on top of the peaches and topped off the whole deal with a very thin sliver of butter.  Baked at 350* for about 20 min, uncovered (although I put a pan on the level above the peaches to prevent burning the topping).  YUM-O!


Making a plan and grocery list completely based on that plan last week saved me about $20 off of what I've approximately been spending weekly for the past 5 years... and that was without making an effort to buy sale items.  Also didn't include the savings of eating in instead of out, since that's such an easy temptation!  I'm looking forward to the continued savings... at least until Andrew is old enough to start eating more than just what I trim off of my plate for him :)

God is faithful!

So, a friend of mine is struggling with trusting God right now.  She's going through some pretty major issues and rather than tell her "oh, it'll be alright," which I don't actually know, I have been trying to encourage her with what I know is TRUE.  This is truth we can rely on, cling to, take to the bank!  I hope it is also encouraging to you - feel free to share this list of scripture with anyone.  

Quotes are taken from New International Version and this is by no means (!) an exhaustive list... just what the Holy Spirit brought to mind this morning as I was writing her a card.

Acts 4:12

Salvation is found in no one else [Jesus], for there is no other name under heaven given to mankind by which we must be saved.

Romans 6:22-23

But now that you have been set free from sin and have become slaves of God, the benefit you reap leads to holiness, and the result is eternal life.  For the wages of sin is death, but the gift of God is eternal life in Christ Jesus our Lord.

Romans 5:1-3

 (Compare the Romans 5:1-3 (written through Paul) passage with 2 Corinthians 11:23-12:12 (list of Paul's sufferings). Always gives me both perspective on my sufferings and hope of God's goodness and faithfulness through them!)

Menu Plan: Week of Oct 16

Here's what I want to make this week.  Not necessarily in this order.  We'll see how it goes...

Dinners:
BBQ Beef (with leftover pot roast) sandwiches with pot-roast-veggies
Scalloped Potatoes with ham and peas (thanks, Jenn, for the idea!)
Rotisserie chicken with broccoli and rice
Chicken and Dumplings (Cooking Light)
Steamed Salmon with veggies (modified pretty heavily)
Spaghetti with meatballs



Lunches:
Chef salad
Leftovers from previous night's dinner, side salad
Chicken salad sandwiches (if enough leftover chicken)
Lunch meat sandwiches

Birthday Week in Photos: Part 3

 Titus and Andrew did really well playing together!  They played with the music table...

... to the Children's Museum!  Here are the boys playing dress-up and fixing a bike at the bike shop!  We thought of you, Poppy!

In the News Room they have cameras, teleprompters, and video monitors!  Andrew and I did the weather report (about the severe weather in eastern Texas... apparently a storm of orange goo is on it's way...)

 "There will be heavy flooding of orange goo in the Houston and San Antonio areas..."

Then it was up to the Tots Room to play with lots of fun, developmentally-appropriate toys :)  (It took about 45 min for the grown ups to make the way up there since we kept getting distracted by other awesome stuff!)

 Titus played with this tea pot for about an hour! (And both boys go "It's my first visit!" stickers :)

 The spinning colored flowers were a big hit :)  The petals overlap so you can see what colors result from combining other colors!

We had cousin bath time, too!  The boys had a great time splashing and playing!

Uncle George helped (ok, who am I kidding?  he did it - I was the helper) install the new baby gate between the living room and kitchen.  Neither baby was excited to see it when they got up the next morning.

Friday we went swimming at a friend's community pool.

 Chloe let us borrow her floaty seat thing.  Andrew LOVED it!

Sunday evening I cut Andrew's hair.  I'm not sure how I like it.  Actually, I really like it... I just miss the wispy baby hair, too! But I'm SO GLAD the crazy long part over his ears is trimmed... it was starting to drive me nuts :-p

 Now he looks like a real boy!  Who can count his age in YEARS!  (Well, year... singular...)  Happy birthday, baby!

Birthday Week in Photos: Part 2

 After the cupcake experience (he crammed the whole thing in his mouth at the same time, followed shortly by Uncle George doing the same with the full-sized cupcake... it was fun to watch...) it was time for presents!

 Grammy sent him a car bag made out of fabric with roads on it!  The mat folds up into a bag with handles and is held together with magnets.  There are a few little pockets on the inside to hold the cars!

Then on Monday instead of Music Class we had a birthday play party...

 It was a rough morning for the birthday boy, but the bean bag and some goldfish seemed to ease the pain :)

 Picnic lunch in the back yard!  Cupcake #2... funfetti this time :)

 And then the cheese ball... the doctor thinks this is the origin of the hives that totally covered his body about 16 hours later.  Praise God for baby Benadryll!
